Today, the Bakers’ Association stands as a cornerstone for nearly all bakeries across the city and its province. In the present day, our role goes far beyond simple representation; we have built a comprehensive network of services, support, and consultancy for our member businesses. This ranges from trade union protection to regulatory assistance, and from professional training to guiding bakeries through the challenges of the contemporary market.
Since its origins, the Association has continuously championed the general interests of the trade, but today, we do so with our eyes firmly fixed on the future.

On a local level, the Association is affiliated with Confcommercio Ascom Bologna, further consolidating its role within a broader system of representation and services for businesses throughout the region
The original core of what would later become the Bakers’ Association has been woven into the fabric of Bologna since the early 1800s. Even then, a group of bakery owners would gather at the "dl'Uvarol" tavern on Via Gombruti to address the pressing issues of their trade, such as the grain-grinding tax and its direct impact on bread prices.
Over time, the group began to develop its own organizational structure as a trade union. With the rise of Fascism, it was integrated as a dedicated Guild within the Merchants' Union, though it successfully managed to maintain a well-defined identity of its own.
In the post-war period, the bakers sought to make the most of an economic entity they already had at their disposal: SAPAC (SocietĂ Anonima Panificatori Acquisti, a joint-stock cooperative for bakery procurement). This entity had been mandated by the Fascist regime in 1939 in anticipation of the war, but the bakers repurposed it to scale up collective purchasing of raw materials. Furthermore, they felt the urgent need to establish a completely independent framework for their trade union.
This led to the official founding of the Bakers’ Association. Today, operating from its modern headquarters at Via Cesare Gnudi 5 in Bologna, the Association proudly brings together nearly all the bakeries across Bologna and its province.
