The Pane del Reno (Reno Loaf) Project was created to champion bread appreciation through the development of a unique, identity-driven product deeply rooted in the history and heritage of Bologna. By seamlessly weaving together the symbolic value of the Reno – the river that flows through the heart of the city – the legacy of the Municipal Bakery championed by Francesco Zanardi (the legendary “Mayor of Bread”), and the historical records of local tradition, this initiative brings a brand-new specialty to life.
This is a premium-quality bread designed for the modern consumer, crafted using strictly selected ingredients and a local supply chain: flour made from wheat grown and milled in Emilia-Romagna, Cervia sweet sea salt (reduced to just 1%), local tap water (affectionately known as “acqua del Sindaco” or the Mayor’s water), and high-quality lard or, alternatively, extra-virgin olive oil.
The loaf features a crispy crust paired with a dense, soft crumb. Weighing approximately 400g, it is available for purchase either whole or pre-sliced.
The product is safeguarded by the Municipal Designation of Origin (De.Co.), specifying both the municipality of production and the specific artisanal bakery, thereby elevating the central role and mastery of the artisan baker.
“Pane del Reno – Pan Boffetto” aims to stand as a contemporary icon of Bolognese food culture: a delicious, wholesome, and sustainable bread capable of telling our region’s story, both today and for generations to come.
